Apple and Cheese Salad
AKA The Applelicious Salad
So y’all (I’m really trying to work on my southernness )! This is my first post as a Floridian! Whoo hoo! I seriously didn’t know if Mr. Blue Eyes, Baby Blue and I would make it at about hour 15 in the Uhaul! Whew! So glad that adventure is over but I am so thankful and blessed for the time together!. It was definitely a growing moment in our relationship.
Once we crossed the Florida border we all got a boost of energy to help carry us through the rest of the drive. Our first night in town we headed to the local pavilion (Shout out to Peddler’s Pavilion, where Mr. Blue Eyes works) to enjoy some live music and good company.
This brings me to this post. No, I am not writing about how to prepare for a cross country move or how to dress in hot, humid weather. I am writing about an amazing salad that I made today (a girls gotta eat, right?). Seriously this is the easiest, tastiest warm weather salad. If you don’t go out and get the ingredients to make it… I will!
Ok, so this comes from my families cookbook. Yes, we have a huge family and actually have a cookbook (don’t worry it is not published). This recipe comes from my one of my aunties so I am not sure of the original source. We had this salad at a few parties and I have been obsessed ever since. I wanted to share this with y’all (there I go again) so you could enjoy it in the next few weeks of summer. The salad is called the Apple and Cheese Salad in our cookbook but I wanted to rename it the Applelicious Salad because it is that good. It is super simple and you only need a few ingredients.
The Applelicious Salad
Use 1 head of Bibb lettuce and 1 head of green leaf lettuce
*I used 1 head of green leaf and mixed it with Organic Girl Spring Mix because it was easier*
1/3 Cup Pecans or Walnuts *I used Walnuts because Mr. Blue Eyes loves them*
1/3 Cup Craisins
1/3 Cup Gorgonzola and Feta *I used Gorgonzola but Feta is just as tasty*
1 Granny Smith Apple sliced and diced
1/3 Cup Seasoned Rice Vinegar *I used Garlic flavor*
1/3 Vegetable Oil *I used Canola*
1 Tsp. Dijon mustard
Then add a couple shakes of garlic salt *All we had was garlic sea salt*
Mix all these ingredients together and then refrigerate. Dress the salad when you are ready to serve.
So this massive salad that I made was literally gone within 6 hours around Mr. Blue Eyes and I. I love the mix of the sweet and tangy ingredients. What are your favorite salad ingredients?
