Weekly Menu Plan

(Plus a recap of a few events)

Our blue eyed house has been crazy busy lately with lots and lots of visitors.  Of course lots and lots of visitors means lots of parties, dinners out and late nights! That is why this little blog has been so quiet.  I had the chance to get back on track yesterday before we had another party to go to!

Monday: Chicken Ranch Enchiladas Via The Recipe Critic

Tuesday: One Pan Lasagna Skillet Via No. 2 Pencil

Wednesday: BBQ Chicken and Avocado Quesadillas Via Inside Brucrew Life 

Thursday: Spicy Lemon Chicken Via Yellow Bliss Road 

Friday: Leftovers or out somewhere! :)

You may notice that we have a lot of repeats on our menu and that is because we found some really great recipes that we love! If it ain’t broke don’t fix it! :)

Now for a little update of what we have been up to with our family in town.  We did some shopping and playing at our local outdoor mall.

Then Mr. Blue Eyes and I decided to go on  a family date night.  We headed to the dog beach where poor Baby Blue got bit by a yippee little dog.  She was tough and still ran for her ball and played in the surf like a trooper!

On Saturday we spent the beautiful 80 degree day at the beach fishing and sunning.  I will spare you the picture of my big belly in a bikini! 😉

Then we had another beach fire to celebrate a sweet friends birthday. It was 80s themed and so fun.  If you can’t read my shirt it says, “Italians Do It Better.”  Who knows that 80s reference?

That is what we have been doing! Baby post later this week!

P.S. We just finished our Monday dinner dish, Chicken Ranch Enchiladas and they were fabulous! Go try that recipe immediately! Mr. Blue Eyes was quoted saying, “Incredible” and “This may be my favorite dinner.”

    The beach fire looks like so much fun! I feel bad for your four legged friend, though. :( A little yapper almost bit my leg while I was jogging last week.
